Recipe: Carrot Top Salad
Here’s a quick way to use some of those dark green carrot top greens for a healthy side salad this week. They’re chock full of vitamins and minerals, including significant amounts of vitamin A, fiber, vitamin C, calcium and iron.
1/2 # carrot top greens, cut in small pieces
1t salt
1T sesame oil
Blanch the prepared greens in 2 quarts salted water for 2 minutes, to soften them. Strain and gently press to remove excess water. Pour sesame oil into the pot and re-add the greens. Mix. Add sesame seeds to garnish and serve warm or cold.
