Do you really want to tell your valentine that you love them today?

Think tomatoes.

TOMATOES??  Yes!  The French call them “the love apple,” though the etymology is unclear. One thing IS clear… we love them, and for a lot of good reasons!

Tomatoes are full of lycopene which reduces inflammation and oxidative stress in your body. Tomatoes promote health for your heart, lungs and eyes. To  increase the absorption of lycopene, heat your tomatoes and eat them with some healthy fat.  Heating them breaks down the plant cells that hold the lycopene and eating them with a good quality fat increases the bioavailability of lycopene for your body.

To get your tomatoes and lycopene on this Valentines Day, we have an easy at-home suggestion that won’t break the bank, doesn’t take a ton of time to prepare, is total comfort food and is delicious.  What is it, you ask?  The humble pasta with sauce.  You can choose any pasta you like.  And your sauce doesn’t have to take hours to prepare or be boring.  Buy a basic jar of sauce and level it up with some ground beef or sauteed mushrooms, maybe some vegetables or oregano.
